Longevity Noodles with Chicken and Lup Cheong Sausage
Ingredients
150g Lup Cheong sausage, sliced
500g boneless chicken thighs, sliced into 1cm slices
1 Tbsp flavourless oil
1 onion, diced
100g mixed mushrooms, sliced
100g green beans, top and tailed
2 Tbsp dark soy sauce
2 Tbsp light soy sauce
2 Tbsp Chinese cooking wine
1 Tbsp oyster sauce
1/2 tsp MSG
4 tsp cornflour
1/2 tsp sesame oil
1/4 tbsp white pepper
3 minced cloves garlic
100ml water
400g fresh noodles
2 spring onions, sliced
Toasted sesame seeds
Laoganma chilli sauce (optional)
Method
Heat oil in a wok or large frying pan. Add chicken and fry until lightly browned. Remove and set aside.
Meanwhile, mix together both soy sauces, cooking wine, oyster sauce, MSG, cornflour, sesame oil, white pepper, garlic and water.
Add sausage and cook until fat is rendered. Add onion and cook until translucent. Add mushrooms and beans, cook until soft and juices released. Add sauce and cook until thickened.
While mushrooms are cooking, prepare noodles as per packet instructions. Drain, refresh with cold water and drain again. Set aside.
Return chicken to the pan with cooked noodles. Toss together until combined, and serve immediately, topped with spring onions, sesame seeds, and chilli sauce.
