Honey Cinnamon Cookies

Recently, Katrina went down to Martinborough and while she was there, had the pleasure of visiting the Clareville Bakery. The Clareville Bakery sells a variety of different treats, but our favourites are their Honey & Cinnamon Cookies, which you can find here. 

Since we can't find anything like it elsewhere, with Mother's Day coming up, we decided to recreate it, but in our own special way. This recipe was developed over around a week and a half, and is somewhere between a Ginger Nut, Shortbread and a Cinnamon Scroll.

Honey Cinnamon Cookies

Cookie Dough:

  • 185g salted butter

  • 200g brown sugar

  • 2 Tbsp honey (high-quality honey is better)

  • 1 egg

  • 400g standard flour

  • 4 tsp cinnamon

  • ½ tsp baking soda

Coating:

  • 3 tsp white sugar

  • 1 tsp cinnamon

  • ½ tsp salt

    (You may need to top up the coating)

Method:

To a stand mixer, add the butter, sugar and honey and mix till combined well, it should be light and a bit fluffy. Add the egg and mix until combined. Next, add the flour, cinnamon, and baking soda until a soft dough forms.

Take the dough and wrap it in cling film, then refrigerate it for 30 minutes. In the meantime, preheat your oven to 180°C on bake. 

Roll the dough to ½ cm thick, and use a cookie cutter to cut the cookies. Press cookies into a mixture of white sugar, cinnamon and salt. Bake for 12 minutes and cool till crisp. 

The number of cookies this recipe makes depends on the size of your cookie cutter, but no matter what, it makes a LOT. Enjoy!
