Healthy Banana Bread

Bananas seem to breed like rabbits in our kitchen. Some how I always have way more than we need, and once a few have gone into smoothies, a banana bread bake is the only reasonable way forward. This healthy banana bread recipe is a wonderful way to use up bananas past their best by date, while make sure you get a healthy dose of extra fibre from the abundance of seeds hiding in the loaf.

Delicious as is, toasted with butter, or topped with fresh fruit and a spoonful of yoghurt.

Healthy Banana Bread

ingredients

225g flour (Buckweat flour for GF)
150g brown sugar
1tsp baking soda
1tsp baking powder
1tsp cinnamon
1tsp ground cardamom
1/2tsp nutmeg
1/4tsp ground cloves
1/2 tsp salt
60g rolled oats
20g desiccated coconut
1Tbsp chia seeds
1Tbsp flaxseeds
1Tbsp sunflower seeds
1Tbsp pumpkin seeds
3 ripe bananas
1 egg
150g natural yoghurt
45g grape seed oil (or other flavourless oil)
1tsp vanilla paste

Method


1. Pre-heat oven to 160C. Line a loaf tin with baking paper.

2. To a large bowl, add flour, sugar, baking soda and powder, cinnamon, nutmeg, cloves, cardamom and salt. Stir together to combine.

3. Add oats, coconut, chia, flax, sunflower and pumpkin seeds, and stir together combine.

4. Mash the bananas, then add to the dry mix with the egg, yoghurt, oil and vanilla. Mix until well combined.

5. Pour into loaf tin and bake for 60 minutes or until skewer inserted into the loaf comes out clean.
