Summer Tartlet

Tart Ingredients

1 sheet (25 x 25cm) frozen ready-rolled puff
pastry (just thawed)
1 packet frozen mixed berries (300g)
1 teaspoon caster sugar
Icing sugar, to dust
1 egg for egg wash
Ice cream, to serve

The Social Cooking Way

  1. Preheat oven to 220°C. Line two baking trays with non-stick baking paper
  2. Cut the pastry into 2 equal rectangles. Place on prepared trays. Egg wash one half of the pastry square (do not cut all the way through). Egg wash the edge of the pastry.
  3. Combine the berries, sugar and cornflour in a bowl. Spoon the berry mixture evenly into the centre of the pastry.
  4. Bake in the ovens for 8 minutes or until pastry is puffed and golden. Set aside to cool slightly.
  5. Divide among serving plates and dust with icing sugar. Serve with ice cream.
