QUESADILLAS

Cooked ham or chicken, or
Try refried beans or black beans

 

Few slices of spring onion
Grated carrot
Slices of capsicum
Mushrooms sliced
Corn kernals
Tomato slices

¼ C grated cheese
Knob of Tararua butter

  1. Using tongs rub the knob of butter on a warm frying pan.  This gives the quesadilla delicious golden flavour.
  2. Put one wrap on the frying pan and heat through.
  3. Turn the wrap over, and fill one half of the wrap with the fillings of your choice.  Top with grated cheese, which will help hold the quesadilla together when it melts.
  4. Fold the other half of the wrap over, so you have a semi-circle, and press down gently with your spatula.
  5. Once the bottom side of the quesadilla is golden brown, turn it over to cook the other side.
  6. To serve, cut into wedges, and enjoy.  These are great with a little salsa or sour cream on the side, and some coriander as a garnish.  These can also be made quickly on a panini press.
