1 pork loin
1 cloves garlic
1 tsp dried basil
1 tsp dried thyme
1 tsp dried rosemary
fresh cracked pepper
1/2 tsp salt
2 Tbsp olive oil
Tbls Dijon mustard
1/2 cup bread crumbs

The Social Cooking Way

1. Preheat the oven to 220C. Combine the garlic, basil, thyme, rosemary, fresh cracked pepper, salt and bread crumbs in a small food processor. Pulse until the garlic is minced.

2. Add olive oil to the herb mixture and blitz again.

3. Okace the pork loin on a baking tray covered with foil. Rub the mustard and herb mix over the entire surface of the pork (including underneath).

4. Roast in the over n for 35-40 minutes. Allow the pork loin to rest for 10-15 minutes before slicing.
