• 1 sheet frozen flaky puff pastry, thawed

• 1 apple

• 2 T brown sugar

• ¼ t cinnamon



• 25g butter

• ¼ C plain flour

• 2 T brown sugar

• 1½ T rolled oats


1. Preheat oven to 180°C

2. Cut the pastry into two squares and place it in a non-stick muffin tin, or greased ramekin. The corners of the pastry will stick above the rim.

3. Peel and dice the apple. Boil gently in a small pot for about 5 minutes until softened.

4. Mix apple, cinnamon and brown sugar together and spoon into the pastry.

5. To make the crumble, rub ingredients together to form a coarse, crumbly mixture. Then sprinkle over apple mix.

6. Bake in the oven for 20 minutes, or until the pastry is puffed and crisp and the topping golden. Carefully remove pies from tin while still warm.

As an optional extra, you can dust these with icing sugar, and serve with natural yoghurt or cream.
