Dirty Rice


  • 1/2 cup of long grain rice (such as jasmine or basmati)
  • 3/4 cup chicken stock
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1/2 onion, diced
  • 1/2 celery stalk, diced
  • 1/2 red pepper, diced
  • 2 tsp Greggs crushed garlic
  • 1 tsp Greggs Cajun spice
  • 2 slices of bacon
  • 2 tsp fresh thyme

The Social Cooking Way

1. Add the rice to the chicken stock and bring to the boil. Lower heat and cover. Rice should be light and fluffy and all the broth should be absorbed when finished. About 10 to 12 minutes.
2. In a large pan cook diced bacon and set aside. In the same pan heat olive oil and butter.
3. Add onion, celery, pepper and garlic to pan and sauté until soft, about 5 minutes. Add bacon to pan and mix to combine.
4. When rice is finished cooking add it to the pan with the bacon and vegetables and mix to combine. Stir in Cajun spice and fresh thyme.
5. Serve with Chimichangas
