Crepes with Berry Sauce

Crepes with Berry Sauce

1/3 Cup Flour
1/2 Cup Milk
1 Egg
1/2 teaspoon Oil
Butter for pan

1.  Sift flour into a bowl, make a well in the centre and gradually stir in the combined egg, milk and oil.  Mix to a smooth batter.  Allow to stand for 15 minutes, or longer.

2.  Grease and heat the crepe pan.  Add a little batter to lightly cover the pan, cook until set and lightly brown underneath.

3.  Carefully turn or flip to cook the other side.  Note, often the first made crepe is not good.  Continue to cook the remaining batter mix.

Berry Filling

2 teaspoons Sugar
2 teaspoons Orange Juice
1/2 teaspoon grated Orange Rind
1/2 Cup fresh Berries

1.  Combine sugar, orange rind and juice into a bowl and mix well.  Add the berries and mix.

To Plate:  Divide the berry filling into the crepes, fold crepes into quarters and serve with chocolate sauce, cream or ice cream.
