Chocolate Cupcakes

Recipe by Temara Jane from Tempt Cupcakes – Old Bank Arcade

Makes 12 large cupcakes – One batch between two people

100g unsalted butter – softened
1 1/4 C castor sugar
2 eggs
1/2 C cocoa powder
1 t Vanilla extract
1 1/2 C plain flour
1 t baking soda
1/2 t baking powder
1 C water

  1. Beat butter, sugar & eggs together until light and pale in colour.
  2. Add in the vanilla, then add the flour, baking powder, baking soda and cocoa.
  3. Add the water and mix on low speed until combined.
  4. Turn beaters on high and mix for 30 seconds until well combined and smooth.
  5. Fill the cupcake papers until 2/3 full.
  6. Bake at 190°C for 18 – 20 minutes.
  7. Allow to cool in the tins for 5 minutes to complete cooking before removing onto cooling racks.

The cupcakes must be absolutely cold before frosting.

Vanilla Frosting

200 g unsalted butter – softened
3 1/2 C icing sugar
1/4 C milk
1 t vanilla extract

  1. Beat the butter until soft, add the icing sugar and half the milk and vanilla.
  2. Beat until light. If the mixture isn’t soft enough to beat, add a little more milk 1 tablespoon at a time.
  3. Use a piping bag to ice cupcakes.
