Bombe Alaska Skewers


  • 2 egg whites
  • 50g caster sugar
  • 1 tsp cornflour
  • Squeeze of lemon



  • Assorted favourite fruits
  • Try banana, pineapple & fig or melon
  • 4 bamboo skewers


1. To make meringue, whisk sugar, egg whites and lemon with an electric beater in a clean, grease-free bowl until thick, sturdy and glossy. (Do not use a plastic bowl). Fold in cornflour. Stand for 5 minutes to allow mixture to set slightly.

2. Cut the fruit into cubes, and skewer the pieces. Then dip the skewers in the meringue to completely coat them.

3. Hold skewer, with tongs, over an open gas flame to caramelise meringue until golden brown and crisp. You can use a kitchen blowtorch if you have one.
